Shortbread

Possibly the easiest cookie recipe of all. Based on
this and this.

Nutrition calculation:
1 cookie or the whole pan

Yields16 Servings
 160 g all-purpose flour
 50 g sugar, plus more for sprinkling on top
 ½ tsp salt
 8 oz butter, melted
 1 tsp vanilla

Gather equipment:

  • 8×8 or 9×9 pan
  • parchment paper
  • whisk
  • scraper
  • 1/2 tsp measuring spoon
  • scale
  • medium glass bowl

Preheat oven to 350 F

Line the pan with parchment paper

Mix dry ingredients, then dump onto a plate

Melt the butter in the glass bowl, covered, 2 minutes in the microwave if starting frozen

Whisk vanilla and then dry ingredients into butter

Scrape dough into pan, smooth out

Bake 35 minutes, until golden brown

9

Sprinkle sugar on top

10

Cut into 16 squares while still warm
